Ingredients
Eggs

Optional:
Bacon
Finely chopped green onion & diced tomatoes
Shredded cheddar & diced ham
Finely chopped fresh spinach

Directions
Crack 1-2 eggs in a microwavable coffee mug
Scramble with a fork
Add optional ingredients of your choice
Microwave on high for approx. 1 minute
It works well for me to chop the ingredients that Joey (my 11 year old son) likes the best ahead of time & store them in containers in the fridge. When he’s ready for an omelet, he can easily choose his ingredients and make himself breakfast! -Crystal
